The super healthy chocolate cake that my kids simply love.

This healthy chocolate cake recipe (done without eggs and butter) it's a real success every time I do it at home. If you are a sceptical person I can tell you that I have already served this cake in school parties and birthdays, and because people didn't know it was a vegan cake, they simply love and ate it all and the moms even asked me to give them the recipe. 


List of ingredients:

  • 1 ½ cup of whole wheat floor
  • 1 cup of buckwheat flour (farine de blé noir)
  • 1 ½ cup of brown sugar that you can replace by honey or agave syrup as needed
  • 5 tbsp cocoa
  • 1 tbsp of milled flaxseed
  • 1 tsp of  baking soda
  • 2 tsp of baking powder
  • ½ cup of extra virgin olive oil
  • 1 cup of soya milk
  • Dark chocolate chips, as needed (optional)

For the Chocolate coating
  • 100 g. of dark chocolate
  • 4 tbsp of soya milk
  • 2 to 4 tbsp of sugar


Directions:

Preheat the oven at 180º C or 356º F.
Prepare a 24 cm round cake pan by spraying with baking spray or buttering the pan and also spray or butter and lightly flouring a sheet of baking paper which you are going to use to cover the cake pan.
Mix well the two types of flour. Add your choice of sweetener (brown sugar, honey or agave syrup), the cocoa, the milled flaxseed, the baking soda and the baking powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through the flour mixture until combined well.
Set aside. 
On another bowl add the olive oil and the milk whisking well with a stand mixer until you produce a homogeneous mixture. Add to this liquid mixture the dry ingredients mixing well until you combine well all the ingredients.
Finally, if you wish (optional) you can add the dark chocolate chips. 
Distribute the cake batter into the covered cake pan.
Bake for 25 to 30 minutes, until a toothpick or cake tester inserted on the center of the chocolate comes out clean.
Remove from the oven and allow to cool down in order to remove the cake from the pan.

Prepare the chocolate coating.
Put a pan with water on the stove and turn it on.
Break the chocolate in pieces and throw it to a recipient heat resistant. Add the soya milk and the optional sugar and put this recipient over the pan you have on the oven in order to melt the chocolate in bain-marie. Once you get a shiny and velvety crème, remove form the heat and coat the cake.
You can also add chocolate chippings, red fruits or some chipped hazelnuts.
